120 g Lachha Sevai (thin vermicelli)
½ cup water
¼ cup sugar (for syrup)
2-3 drops rose essence
¼ tsp cardamom powder
2 tbsp ghee
2 cups milk
¼ cup sugar (for filling)
A pinch of saffron strands
3 tbsp cornflour + 3 tbsp milk
Chopped pistachios & dry rose petals (for decoration)
In a saucepan, add ½ cup water + ¼ cup sugar and bring it to a boil until the sugar dissolves completely. Turn off the flame immediately.
Add rose essence and cardamom powder. Mix and keep aside.
Break your lachha sevai into small pieces.
In a pan, heat 2 tbsp ghee and add the sevai. Roast on low flame until light brown and fragrant. This step gives them an amazing flavor.
Once roasted, pour the prepared syrup over the sevai, turn off the flame, cover, and let it sit for 15 minutes so the sevai absorbs the syrup fully. Stir once after 15 minutes, and keep it aside to avoid overcooking (you want them fluffy, not sticky).
In a pan, add 2 cups milk and ¼ cup sugar. Add a pinch of saffron strands.
In a bowl, mix 3 tbsp cornflour with 3 tbsp milk to make a smooth slurry (no lumps).
Bring the milk to a boil, reduce the flame to low, add ¼ tsp cardamom powder, and add the cornflour slurry while stirring continuously. Cook on medium flame for 2-3 minutes until it thickens well. Keep stirring to prevent burning.
Take a glass bowl (or a round/rectangular dish) for beautiful presentation.
Add half of the sevai as the first layer. Press gently with a spoon to make it smooth and even.
Pour the thickened milk filling over this layer and spread evenly.
Refrigerate for 30 minutes to let the milk layer set slightly.
After 30 minutes, add the remaining sevai over the milk layer. Spread and press lightly for an even layer.
Cover and refrigerate for 2-3 hours (or longer) until fully set.
Once set, decorate with chopped pistachios and dry rose petals for a restaurant-style look.
