Lucknowi Khada Masala Chicken is a popular dish in Lucknow India where chicken is cooked with whole spices like cloves, cardamom, red chili and bay leaf, giving it an aromatic flavor.
Cooking Khada Masala Chicken takes time, but it's worth it because the flavors come together and the chicken gets super tender. It's best served hot with rice or some Indian bread like naan or roti.
1 Kg Chicken
½ cup oil
3 Onion ( sliced)
4 Whole Red Chilli
4 Green Cardamom
1 Inch Cinnamon Stick
6 Cloves
1 Tsp Black Pepper Corn
2 Bay Leaf
10 Garlic Cloves
2 Inch Ginger
2 Green chilies
2 Tsp Salt
1 cup Curd
2 Tbsp Whole Coriander
1 Tsp Black Pepper Corn
1 Mace flower
1 Tsp Cumin
Chopped Coriander leaves
Take a pan or kadahi and heat the oil in it. Once the oil is heated add sliced onion and saute for 5 minutes or until the onions become soft. Add green cardamom, whole red chili, cloves, black peppercorns, bay leaf, and cinnamon stick and fry them until the onions are lightly golden.
Chop the green chilies, ginger and garlic in a chopper or mortar and pestle.
Add the chopped spices to the fried onions and roast them for 2-3 minutes.
Now add chicken pieces, salt and mix all.

Meanwhile add roasted cumin seeds, coriander seeds, black peppercorns and mace flower to the grinder.
Grind them coarsely.
Add freshly ground powder to the chicken. Mix well and cook for another 5-7 minutes on medium flame.
After 5 minutes add curd or yoghurt to the chicken and mix well.
Cover the pan and simmer for another 10 minutes on low flame.
