12. Cornflour - one-fourth cup
13. Egg - 1
14. Milk - 2 tablespoons
15. Bread crumbs - 1 cup

1. Prepare the Chicken: First, thoroughly wash 500 grams of boneless chicken and leave it in a strainer for about 10 minutes to drain all excess water. Ensure that no water is left in the chicken, as this will affect the nugget mixture.
2. Grind the Chicken: Take a food processor or blender jar and add the drained chicken. Add two bread slices (without the edges). If you don’t have fresh bread, you can use 2-3 day-old bread.
3. Add the Spices: Now, add 1 teaspoon of salt, 1 teaspoon of black pepper powder, half teaspoon of red chili powder, 1 teaspoon of garlic powder (or paste), and 1 teaspoon of ginger powder (or paste). After that, add 1 tablespoon of butter, 1 tablespoon of lemon juice, and 1 teaspoon of soy sauce. Grind all the ingredients in the food processor until you get a smooth mixture.
4. Prepare the Mixture: Transfer the ground chicken mixture to a bowl. Apply a little oil to your hands and divide the mixture into small portions. Each portion should be the size of a lemon, and shape them into cutlets. From this mixture, you should get around 16-17 nuggets.
5. Prepare for Coating: For coating the nuggets, take half a cup of all-purpose flour and one-fourth cup of cornflour in a bowl. Add a pinch of salt as per taste. If you don’t have cornflour, you can use arrowroot powder.
6. Prepare the Egg Mixture: In another bowl, crack open one egg and add 2 tablespoons of milk. Beat the mixture well. The milk helps in thinning the coating, giving the nuggets a better texture.
7. Prepare Bread Crumbs: Take 1 cup of bread crumbs. If you’re using fresh bread crumbs, dry them in the sun or lightly toast them in the oven. Then, grind them in a mixer. Now you have fresh bread crumbs ready for use.
8. Coat the Nuggets: Take each nugget and first coat it in the flour and cornflour mixture. Then, dip it into the egg mixture and immediately coat it thoroughly in the bread crumbs. Repeat this process for all the nuggets.
9. Store the Nuggets (optional): If you don’t want to fry the nuggets immediately, you can store them in the freezer. Arrange all the coated nuggets on a plate and freeze them for 4-5 hours. Once they are solid, transfer them to a ziplock bag or an airtight container. These nuggets can be stored in the freezer for 1-1.5 months.

1. Heat the Oil: To fry the nuggets, heat the oil in a pan over medium flame. Once the oil is hot enough, reduce the flame slightly (to low-medium heat).
2. Fry the Nuggets: Gently add the nuggets into the oil. Make sure the heat is not too high, as this will cause the nuggets to turn golden on the outside but remain raw on the inside. Fry the nuggets for 5-6 minutes, flipping them occasionally to ensure they cook evenly and become golden and crispy from all sides.
3. Drain the Nuggets: Once the nuggets turn golden brown and crispy, remove them from the oil and place them on a paper towel to drain any excess oil.
